Pineapple is a fruit full of flavors from different regions of Colombia where they are produced, Santander (43%), followed by Valle del Cauca (14%) and Meta (12%). A versatile fruit to consume in portions, juices, smoothies, snacks, for desserts and salads. Boyacá is the largest producer of Cape gooseberry with 7,172 registered tons and representing 43% of total production in Colombia, followed by Cundinamarca with 32%, Antioquia 8%, Nariño 6%, Norte de Santander 5%, Cauca 3% and Santander 2%. Due to the exotic nature of this fruit and its particular flavor, it is perfect for consuming the fresh, as snacks and in preparing sauces or unique desserts. An 85-gram serving of Cape gooseberry provides 35% of the daily requirements of vitamin A, 25% of vitamin C and 25% of the dietary fiber that the body needs  (USDA, food details). Soursop, or guanábana, is a crop planted between 800 and 1,000 meters (984 to 3,281 feet) above sea level in areas with low rainfall, so it is widely distributed across Colombia. In Colombia there are about 350 hectares (865 acres) cultivated with pitahaya, or dragon fruit, distributed in Boyacá, Quindío, Santander and Valle del Cauca. It is estimated that the annual production of dragon fruit reaches more than 2,200 tons. Pitahaya is a fruit full of essential nutrients such as vitamins, minerals, complex carbohydrates, dietary fibers and antioxidants (USDA, food details). Dragon fruit is an essential source of betacyanin which serves as a red/purple pigment with antioxidant properties, minimizes cardiovascular heart problems and maintains blood pressure.
